Mixed Beans Recipe

I'm a huge fan of the mixed beans at Pita Jungle, and Amir came up with a recipe that is so similar! The beans are awesome by themselves, wrapped up in a whole wheat tortilla with salsa, or served with brown rice, veggies, and tofu (similar to the Pita Jungle Macro Platter). Enjoy!

Ingredients:
1/2 medium onion
1 t chili powder
1/2 cup barley (all the beans are dried, not canned, BTW)
1/2 cup garbonzo beans
1 cup lima beans
1 cup kidney beans
1 t veggie bouillon

Sautee the onion with water, then add the chili powder.
Then put the onions in a large pot, add all the beans and finally the bouillon.
Add enough water so the water level is 4 inches above the beans
Bring to a boil, then lower so the pot is just barely boiling.
Let sit for six hours. Yes, six hours--this is a dish to make on the weekend when you're going to be around the house for a while! :)
Stir it every 30 minutes or so and make sure there is enough water and the beans are not drying out.

    1. Since we wrote this, it seems like Pita Jungle has changed their mixed beans recipe, so this could definitely be true. Thanks for the heads-up!
