Spinach Borani


This dish is a traditional Persian dish that's served with either bread or rice. We ate ours with the Health Starts Here bread from Whole Foods and it was amazing. I had this for leftovers today and it was great in round 2 as well. We also made a yogurt sauce to go with that tastes just like tzatziki. Amazing!! Plus, you get so much greens in this recipe--we ate almost an entire container of the organic spinach from CostCo.

Ingredients:
1 pound of spinach (approx)
1 package soft/silken tofu
1 large onion, chopped
2 garlic cloves
3 T lemon juice
1 t turmeric
salt and pepper to taste
Brown rice or bread to serve with the borani

Boil a pot of water and while the water is boiling, saute the onion in a separate pan (no oil needed of course!). Add all the spinach to the boiling water. After all the spinach has been submerged into the water, drain the water out using a strainer. Then put the spinach on a cutting board and chop it messily--just basically beat on the spinach like it's someone you are mad at.

Add the spinach to the onion pan and saute both together.

Put garlic, tofu, and lemon juice in a blender and mix it all up until smooth.

Add the yogurt mix to the spinach, add salt and pepper and you're done! Serve it with brown rice or bread. If you want, you can make some extra yogurt sauce to serve on the side. Amir even chopped up some cucumbers really fine and added them to the side yogurt--amazing!!

    1. You definitely should, it was delicious. We had enough leftovers for both of us to have lunch the next day. But we tend to eat kind of large quantities so there might be more left depending on what kind of eater you are.
